A Luxurious Seafood Pasta with White Truffle

Elegant yet surprisingly simple to prepare, this Lobster with White Truffle Cream recipe combines sweet lobster meat with a rich, silky white truffle sauce for a truly indulgent dining experience. If lobster is unavailable, Mediterranean king prawns make an excellent alternative and pair beautifully with the luxurious flavour of white truffle.

Ingredients

  • 1 whole cooked lobster, meat removed from the shell and claws
    (or 200g Mediterranean king prawns)
  • 250g fusilli or your favourite pasta
  • 90g White Truffle Cream
  • A sprinkle of White Truffle Powder
  • 1 handful flat-leaf parsley, finely chopped
  • Juice of ½ lemon
  • Freshly ground black pepper
  • Sea salt

Method

  1. Remove the lobster meat from the shell and claws and cut into bite-sized pieces. If using king prawns, cook and peel them before use.
  2. Bring a large pan of salted water to the boil and cook the pasta until al dente, according to the packet instructions.
  3. Drain the pasta, reserving a few tablespoons of the cooking water.
  4. In a large pan, gently warm the White Truffle Cream. Stir in the lemon juice, chopped parsley, a pinch of sea salt, and freshly ground black pepper.
  5. Add the cooked pasta and lobster meat (or prawns) to the sauce and gently combine.
  6. If needed, loosen the sauce with a few tablespoons of the reserved pasta water until it reaches a silky consistency.
  7. Divide between serving bowls and finish with a generous sprinkle of White Truffle Powder.
  8. Serve immediately with a lemon wedge on the side.
