Baked Vacherin Mont d’or with Fresh Truffle

Ingredients

  • 1 x 400g Vacherin Mont d’Or cheese
  • 50g fresh English Autumn Truffle, finely shaved

Alternatively:

  • 1 x 90g jar Black Truffle Sauce
  • Warm sourdough bread or crispy baguette, for serving

Method

  1. Remove the Vacherin Mont d’Or from the refrigerator several hours before baking to allow it to reach room temperature.
  2. Preheat the oven to 180°C (350°F/Gas Mark 4–5).
  3. Remove all outer packaging from the cheese, leaving it in its wooden box. Wrap the outside of the wooden box with foil to protect it during baking.
  4. Place the cheese on a baking tray and bake for approximately 15 minutes, or until the centre is soft and molten.
  5. Carefully remove the cheese from the oven. Lift off the top crust, which acts as a lid. The crust is completely edible and can be served alongside the cheese if desired.
  6. For the ultimate finish, generously shave fresh autumn truffle over the hot cheese. Alternatively, spoon over Black Truffle Sauce and gently swirl through the melted cheese.
  7. Serve immediately with warm sourdough or slices of crusty baguette for dipping.
