Fresh Truffles

A Truffle is the fruiting body of a subterranean Ascomycete fungus, one of the many species of the genus Tuber.

This subterranean mushroom is found within the living roots of chestnut, oak, hazel and beech trees. Considered to be an aphrodisiac food, the Greeks and Romans used them for therapeutic purposes, they have exotic qualities in terms of aroma and flavour.

To keep them at their optimum freshness, wrap in a paper towel, place in either a glass or plastic container and store in fridge for 4/5 days, after this period of time freezing is recommended.

Traditionally France has been known as the main source of Black Winter Truffle often known as the "Perigord" However it is Spain that produces the highest quality European black Truffles which are often sold to middlemen in France, then shipped internationally.

By sourcing them direct, we can supply you with the freshest Black Truffle, known for their rich, exotic aroma.

White Truffle (Tuber Magnatum Pico)
Season from September - December

Considered the most precious variety of truffle, mainly found in regions located around Piedmonte and central Italy. The exterior is white to olive yellow, inside it is creamy white with marbled reddish brown veining. The flavour has notes of garlic and parmesan, while the aroma can range from garlic to honey to seasoned cheese. Shave into delicate slices and layer on pasta dishes, risotto, eggs, meat, fish and vegetable dishes.



White Spring Truffle (Tuber Bianchetto)
Season from January - April

Known as Spring Truffle, Bianchetto in Italian means "the little white"more commonly found than the Alba they provide a less expensive substitute, they have a creamy, yellowish colour but can turn a light tawny brown when fully mature. Inside they are a darker chocolate coloured brown with white veins. This Truffle offers a stronger flavour of wild garlic with a subtle hint of porcini mushroom. Excellent on pasta, risotto dishes, meats, fish, eggs and paired with honey and cheese.

Available in pate form (Spring Truffle 70% truffle content)

Black Summer Truffle ( Tuber Aestivum Vitt) Scorzone
from May - August


These truffles have a pronounced textured skin and boasts a lighter beige brown with haphazard veining, when perfectly ripe their flavour is subtle, nutty with a hint of chocolate and vanilla, pair with eggs, meat, fish, pasta dishes, excellent shaved onto risotto, potato and vegetable dishes.

Black Autumn Truffle (Tuber Uncinatum)
Season from September - January

At first glance, the Uncinato can be easily confused with the rarer Pregiato, but these truffles have a rougher skin, more irregular shape and lighter brown interior with less contrast of veining.

The aroma is delicate and with subtle flavour hints of vanilla and hazelnut. Fantastic grated into extra virgin olive oil and spread over bruschetta or as a luxury twist to a frittata or poached egg.

For all varieties of black truffles we recommend pairing with red meat or river fish and eggs. If you like veggies, we recommend: asparagus, artichokes, potatoes, olives, mushrooms and sweet veggies (pumpkins, cauliflowers, parsnips..).
